You will need:

  • 200g Dried dates

  • 200g Dried figs

  • 200g Dried currants

  • 200g Dried fruit mix

  • 140ml brookies slow gin

  • 1 heaped tbsp TBDs cumquat jam

  • 1 small orange zest and juice

  • 1 small lemon zest and juice

  • 8 ripe plums seeds removed(chopped)

  • 200g Unsalted butter

  • 160g brown sugar

  • 140g Plain flour

  • 80g Almond meal

  • A pinch baking powder

  • A pinch ground cinnamon

  • 1 tsp mixed spice

  • 2 Eggs

  • Butter, citrus zest & bay leaves to line the pan

How to cook:


Roughly chop the dried fruit, figs & dates.


Melt the butter in a big pot. Add the fruit, jam, plums, gin and sugar. 


Bring to boil and cook out on a simmer.

 

Cook out the booze and reduce the liquid by half.


Add the juice of orange plus a little zest.


Allow to cool, fold through flour, spices juice, zest and almond meal.


Whisk the eggs and fold through.


Line a pan or bread loaf with paper, brush with butter, season with a little zest, salt and a few bay leaves.


Pour the pudding mix into the pan.


Cook at 150 degrees for 1.5 hours.


Pop a skewer in the centre, if it comes out dry, it’s done!


Serve with, custard, cream or ice cream .
