Troy Crisante

Troy is an Australian chef whose cooking is shaped by both world-class kitchens and strong family food traditions. He trained within the Fink Group, joining Quay as an apprentice before working in London at acclaimed restaurants including three-Michelin-starred The Ledbury. Returning to Sydney, Troy held senior roles across Bennelong, Firedoor and Quay, becoming Co-Head Chef in 2019. Alongside contributing to major culinary events and collaborations, he brings a respect for produce, seasonality and craft to his work - values grounded in his Italian upbringing and lifelong connection to food.
