You will need:
12 oysters
2 finger limes
Bonito flakes (optional)
10g fresh garlic – finely grated
20g piece of ginger – finely grated
½ long red chilli – seeds removed and finely diced
Stems and roots from about a quarter bunch of coriander
15ml fresh lime juice
30ml fresh lemon juice
75ml light soy
150g mirin
15g caster sugar
How to make:
For the dressing, mix everything together until the sugar has dissolved. I find that the longer you leave the dressing the better it gets as it gives time for the flavours to infuse with each other. You can even do it the day before.
If you have any leftover, bang it on some salted smashed cucumbers and top it with some chilli oil.
