Method

This works well as a healthy side dish, it goes great with a piece of grilled fish or chili glazed chicken. For a tasty vegetarian meal, simply mix through some cooked spelt grain or couscous and that’s it! Step 1 Wash the radishes and cut them into wedges. Step 2 Peel and dice the cucumber. Step 3 Remove the eye from the tomato and roughly dice. Step 4 Dice the watermelon. Step 5 Mix all into a good size bowl. Season with a little salt, pepper, lime juice, olive oil and chili flakes. Step 6 Add the herbs, toss and serve.

  • 1 handful picked coriander leaves
  • 1 handful picked mint leaves
  • 2 Lebanese cucumbers (peeled)
  • 2 tbls olive oil
  • 1 pinch chili flakes
  • 8 baby red radishes (washed)
  • salt & pepper
