Get to Know Us

Three Blue Ducks is a story of food born in the surf. It began with three good mates travelling the world, sharing meals, swapping ideas and shaping a belief in a better, more sustainable way of eating and living.

From the outset, the idea was simple: cook honest food, work closely with good people, and create places that feel welcoming, relaxed and connected to their surroundings.
 
What started as a small group of mates with a beachside cafe in Bronte, has grown into a collection of venues across Australia. With restaurants in Byron, Bellingen, Rosebery, Nimbo, Melbourne, and soon-to-be Burradoo, each venue is shaped by its local community, landscape and produce.
 
From regenerative farming and thoughtful sourcing to menus designed to be shared, our focus remains the same - good food, done properly, in spaces where people genuinely want to be.

Our Values

At Three Blue Ducks, everything we do is guided by a simple set of values.
 
We believe in honest food, genuine connection and doing things properly. We’re environmentally driven, prioritising thoughtful sourcing, seasonal cooking and long-term care for the communities and landscapes we’re part of.
 
We take a low-fuss approach, but hold ourselves to consistently high standards, from the food on the plate to the way people feel when they walk through the door.
 
We value real relationships, with our team, our suppliers and our guests, and we aim to create spaces that feel welcoming, relaxed and unpretentious.
 
Our vision is to lead by example, showing that quality food, environmental mindfulness and genuine hospitality can sit comfortably together, and inspire a better way of living.

About

SUSTAINABILITY

For over 15 years, we've taken a considered, ethical approach to food, starting with the ingredients we choose and extending through to how we design our kitchens, manage waste and support the communities we're part of. 

Across all venues, we prioritise locally sourced, ethically farmed produce and cook seaonally, using whole animals and repurposing offcuts to minimise waste. Since 2022, we've composted close to 49 tonnes of organic waste, returning nutrients to the soil and helping close the loop.

From milk taps and wine on tap to water-saving systems and reduced single-use plastics, we continue to invest in smarter, more responsible practices. You'll even see waste reimagined, from spent coffee grounds turned into soap, to Camphor Laurel repurposed into chopping boards.

Every Ducks venue reflects a commitment to doing better, for the planet, our people and our guests. Good food, done properly, with purpose.

Choosing the right ingredient is rarely black and white, with factors like food miles, farming practices, animal welfare and sustainability all considered. We take the time to weigh these decisions carefully, aiming to make the most thoughtful choice we can. Working closely with people who share our values, we believe small, conscious decisions can add up to something meaningful, on the plate and beyond.

Australian Coffee Company

We've been working with these legends since day one. Single O work closely with coffee growers around the world, paying a premium for beans and investing back into farming communities through long-term relationships and transparent sourcing. On top of that, they make a killer cup of joe.

Organic Veggie Farmers

Run by Josh and Lynette Dooley, Greens From The Farm have been cultivating organic, seasonal greens and vegetables for about a decade. Their range includes leafy greens, herbs and other seasonal veg, all grown with a focus on freshness and flavour, servicing our restaurant up in Byron.

Travla is an independent Australian beer created by Travis Fimmel and our very own Andy Allen. Brewed with 100% Australian ingredients, Travla emphasises simplicity and connection to the land, aiming to bring a great tasting local beer to drinkers both at home and across our venues.

Six Simple Machines

Eco-Conscious Milk Dispensing

Founded by coffee lovers and product designers who set out in 2010 to tackle waste in hospitality, we adopted one of the first Juggler milk dispensers from the Six Simple Machines team in our Bronte venue, helping to reduce plastic waste by about 80%. We've now got five operating across our venues.

We’ve partnered with Ewater to rethink how we clean across our venues. Instead of relying on harsh, single-use chemicals, we use their sustainable on-site generator and refill system to create an unlimited supply of disinfectant, sanitiser and cleaner using just water, salt and electricity. It’s better for our team, our guests and the planet.
